What causes the roasted red pepper and olive oil mix I put in a jar to fizz?

We roasted some red bell peppers, sliced them and put them in a jar of extra virgin olive oil with a sprig of rosemary and closed the jar tightly. It sat out for some time in a dark cabinet and when I went to open it last night, it fizzed as though it were a bottle of soda pop and the carbonation started to foam. I know that some kind of acid is causing the fizzing but does this mean that the peppers and oil are unsafe to eat? What’s causing it exactly?

Hmm.. .so to clarify we actually let the peppers cool before adding them to the jar and putting oil in them. Any other ideas?

It fizzed probably because you never let the heat come out. You closed the lid right after you added the roasted peppers and they were still hot.

It should be OK to eat though..
